Menu Planning Tips

Cafe Breen's Fabulous catering specialists will be happy to assist you in planning the perfect menu. Here are a few things to consider when planning an event:

   1) The budget. Whether the sky’s the limit or the purse strings are tight, Cafe Breen can meet your budgeting needs by offering various levels of catering service. From a fully staffed on-site function to a customer pick up order, we can work to meet your needs.

 2) The number of guests. This will determine the quantity of food needed as well as the venue for the event.

 3) The time of your event. Your guests will expect different types of foods and consume varying amounts of food depending on the time of day of your function.

General Food Service Guidelines:

7 a.m. – 11a.m. – Seated or Buffet Breakfast/Brunch

11 a.m. – 2 p.m. – Seated or Buffet Meal or heavy hors’doeuvres

2 p.m. – 5 p.m. – Light to heavy hors’doeuvres

6 p.m. – 8 p.m. - Seated or Buffet Meal or heavy hors’doeuvres

8 p.m. or later - Light to heavy hors’doeuvres

Beverages
Assorted Soft Drinks  Canned soft drinks include Coke, Diet Coke, Sprite
Bottled Water  Plain spring water, lemon flavored water or perrier.
Freshly Brewed Iced Tea  Sweet or Unsweetened tea with lemon wedges and sugar packets sold by the gallon.
Punch - Sherbert-(Full service catering only)  Lime sherbert punch sold by the gallon.
Punch - Fruit  Fruit punch sold by the gallon
Ice  By the bag.
Imported & Premium Beer  Heineken, Corona, Rolling Rock, Samuel Adams
Domestic Beer  Bud, Bud Light, Coors Light, Michelob Ultra, Miller Lite
Wine  House Merlot, Chardonnay or White Zinfandel. Cafe Breen's catering representative will assist with this selection.
Mixed Drinks  Premium alcohol used in house. Cafe Breen's catering representative will assist with this selection.
Coffee Service  Cafe Breen will provide complete coffee set up including urn, cream, sugar and disposable cups. If you require china cups, saucer and silver for coffee service, please select in the equipment section



Beverage Service
Open Bar  Host will be responsible for cost of all beverages consumed during the event. Beverage cost will be due at the end of the event. Select beverages to serve from the above listing.
Cash Bar  Guests will be responsible for any beverage purchases.
Bar Tender Service Only  Offsite Only - Cafe Breen will provide bartender(s) for service of host provided beverages. All bar set ups must be provided by the host. This includes icing down cold beverages such as beer & wine. Bar should be set up with glassware, ice, drink garnishes, etc.
Beverages Only  Offsite Only -Cafe Breen will provide beverages selected by the host for delivery or pick up.
Beverages Provided by Host  Offsite Only - Host will be responsible for all aspects of beverage service including clean up.

PRIVATE PARTY Events include full service with uniformed attendants. The number of attendants are dependant on number of guests and type of services required. If you would like additional servers or butler passed hors’doeuvres, please make a note in the comment section below. Complete Fireside Room set up includes chafing dishes, silver trays & serving utensils, glass plates and glassware, tables and linens. Any special request should be discussed prior to acceptance of proposal.

Offsite Services:
   Customer Pick Up Customer will pick up order at Cafe Breen at the approved time.
   Offsite Lunch Delivery Caterer will drop off order at the approved time.
   Offsite Delivery and Set Up Caterer will deliver and set up order. Caterer will arrive up to 1½ hours before the start time of the party to set up food tables. All tables should be decorated and ready for food placement at this time.
   Offsite with Full Service Full service with uniformed catering attendants. The number of attendants are dependant on number of guests and type of services required. If you would like additional servers or butler passed hors’doeuvres, please make a note in the comment section below. Caterer will arrive 1½ hour before the start time of the function to set up food tables. All tables should be decorated and ready for food placement at this time. Caterer will specify number of food tables needed upon final menu approval. Service will be provided for 4 hours from the start of the reception.


Offsite Equipment Rental:
Any equipment rentals will require a credit card number as a deposit. The credit card will be charged if the equipment is returned damaged, dirty or late. Equipment must be returned to Cafe Breen by 10:30 am the following business day. For an additional fee, arrangements may be made for equipment pick up after the function.

   Disposable Plates / Utensils / Glasses – Select if your event is less formal, for a relatively short time span or if you will not have access to dishwashing equipment.
   Host Provided Disposable Plates / Utensils / Glasses – Select if you will be providing your own disposable items because your event is less formal, for a relatively short time span or if you will not have access to dishwashing equipment.
   Disposable Trays / Pans / Serving Utensils – Select if your event is less formal, for a relatively short time span or if you will not have access to dishwashing equipment.
   China / Silver / Glassware – Select if your event is more formal. If this will be a delivery and set up or customer pick up, you will be required to return these clean on the following business day.
   Host Provided China / Silver / Glassware – Select if your event is in your home and you wish to use your own china. This option with full service may require additional personnel for cleanup.
   Chafing Dishes – Chafing dishes are needed to keep hot food selections warm for an extended period of time. If this will be a delivery and set up or customer pick up, you will be required to return these clean on the following business day.
   Tables / Chairs – Select if your event location requires more seating or tables for food display. Arrangements will be made for delivery and pick up.
   Linens / Table Skirting - Select if you event is more formal. If this will be a delivery and set up or customer pick up, you will be required to return these on the following business day.
   Coffee Urn with Disposable Cups - Select if your event is less formal, for a relatively short time span or if you will not have access to dishwashing equipment. If this will be a delivery and set up or customer pick up, you will be required to return the cleaned urn on the following business day.
   Coffee Urn with Cup, Saucer, Spoon - Select if you event is more formal. If this will be a delivery and set up or customer pick up, you will be required to return these on the following business day.
